The most rare of Greek honeys is the fir honey of Mainalo known as Banilias (Vanilla). It emanates ONLY from the black fir forest of Mainalo in the Peloponnese.
It is a unique monoculture honey with PDO status (Protected Designation of Origin).
Its beautiful pearly appearance, wonderful perfume, thick, smooth, silky texture and earthy, vanilla, toffee taste is unique amongst honeys.  Its nutritional and health benefits are many fold (see details on back pages).
Due to its rarity, production is very limited and is not available every year.  
It has less humidity than other honeys and never crystallizes because of its high pH.

This honey is a combination of orange blossom and fir thus containing both the properties and health benefits of both honeydew and blossom honeys.
There is a definite flavour of the orange blossom together with the herbal, caramel, woody flavour of fir.

ILIA’S HONEY

Fir honeydew honey is produced in the  mountain of Orini Nafpaktia, mainly by the insect Physokerames Hemicryphus, from the Greek Fir tree Abies Cephalonica.

This honey has low sweetness, a high intensity aroma (forest, herbal, resin and  citrusy notes) and a distinctive and persistent taste that is unforgettable - a remarkably  complex honey.

Like Pine, it has fewer calories than floral honey.  It is rich in vitamins and minerals (calcium, potassium, magnesium,    phosphorus, iron, zinc, copper).  It is greatly beneficial to the upper and gastrointestinal tracts, boosts the immune system, helps prevent cancers and heart disease and has intense antiseptic, anti-bacterial, anti-viral and anti-fungal properties.

The mountain of Mantoudi is dominated by pine trees.  It is there that the scale insect Archalina Hellenica lives on the sap of these pine trees producing the remarkable honeydew through which, in turn, our bees produces this exquisite honey.

It has a subtle sweetness (typical of forest honeys), a malty, spicy aroma and a woody, slightly caramelised flavour and aftertaste.

Due to the low concentration of sugars it contains fewer calories compared to floral honey. It has, however, important nutritional values with a high ash content and is rich in metals and all minerals.

It is ideal for throat diseases and general respiratory problems, and has diuretic properties.

PINE

Raw heather honey (Reiki) has a high nutritional value and is rich in iron and protein. A very strongly flavoured flower honey, with slight hints of caramel and aniseed. Highly fragrant with a lingering floral finish.
Due to its strong flavour, Reiki goes wonderfully well with well-aged, strong cheeses, as well as cured meats such as prosciutto and salami.
This honey has the unique ability to reduce cholesterol and is excellent for anaemia.
Heather honey also displays great antiseptic and anti-inflammatory properties, with emphasis on urinary and digestive systems.

Wild thyme is native to Greece and is found in wild, dry, rocky regions, such as the valley of Thebes, where our bees collect the nectar for this honey of exceptional quality.
It has an intense and complex aroma and a unique “spicy” aftertaste that lasts.

It serves as an antiseptic agent and boosts the immune system.  Thymol, present in this honey, is responsible for its antiseptic   properties.  It is used to heal wounds and is an effective remedy for food poisoning.

t is ideal for respiratory and digestive disorders and can play a preventive role against cardiovascular diseases. This wonderful honey has also shown to be effective against tumours.

This honey derives from the vast variety of flora of Ilia, in the Peleponnese, that blossom in spring. Nectar gathered from at least 180 species of flowers results in a honey of complex flavours without being too bold or heavy and has a pleasant  aroma.

This wild blossom honey, possesses a rich variety of minerals, trace elements, antiseptic and anti-bacterial properties.

Like all pure flower honeys, it crystallizes quickly, but as with the Orange Blossom variety, can be returned to its liquid state easily..

Mild flavoured with an intense, lovely scent and a mild, light citrus taste.

Orange Blossom honey is strong in anti-oxidants and is famous for its anti-depressant, anti-microbial and soothing properties, Also has healing properties for migraines and gastritis.

This wonderful and delicate honey crystallises very quickly but can easily be returned to its liquid state by placing the closed jar in the sun or in a slightly warm oven of no more than 45 C.
